Panama Mount Totumas Geisha # 129
A special Geisha has arrived from Mount Totumas Farm, the highest peak in Panama.
Mount Totumas Farm received an overwhelming score at the 2023 Best of Panama awards, winning the Geisha/Natural category.
The farm is located in the Volcán region of western Panama, and occupies just 4 hectares of the 140 hectares of the Cloud Forest Nature Reserve.
The combination of mineral-rich soil of volcanic origin, humid winds from the Pacific Ocean, and the cool climate at an altitude of 1,900m makes it the ideal environment for growing Geisha seeds.
This batch was finished using a unique refining process that combines the Washed process with Most Fermentation.
After the harvested cherries are fermented, they are slowly dried in indoor beds for 5 to 6 weeks, and then mechanically dried for a further 72 hours, a time-consuming and laborious process.
The resulting cup has a gorgeous translucent feel reminiscent of Valencia Orange, Jasmine, and Rosemary.
The result is an elegant and long-lasting taste.
A special cup that every coffee lover should try at least once.
