Huila・Acevedoの山々に佇む Bella Alejandria農園より、Wilder Lazo氏が手掛ける特別なGeishaが届きました。

Wilder氏は、2017年に父の農園を手伝うことからキャリアをスタートさせた新世代の生産者です。家族の伝統と科学的探究心を融合させ、わずか数年でコロンビアにおける革新的な存在へと成長しました。遺伝学の知識を背景に独自の品種プログラムを立ち上げ、現在では12種を超える稀少品種を栽培しています。

今回のロットは、Semi Washed Anaerobic（嫌気性発酵）による二重発酵プロセスで仕上げられています。

丁寧に手摘みされたチェリーは選別後、まず140時間にわたり粘液質とともに GrainProバッグ内で発酵が行われます。その後、プラスチックタンク内で2日間発酵させ、18日間の天日乾燥へと移ります。

乾燥の過程では、ベッド上の湿ったパーチメントにタンジェリンピールを加えることで、柑橘の香気が豆へと優しく移り、花のような香りをいっそう引き立てます。
さらに25日間の安定化期間を経て、風味が磨き上げられます。

MintやAssam Teaのような爽やかなアロマと、Grapefruitのようなジューシーな余韻が広がる一杯です。

A special Geisha has arrived from Bella Alejandria Farm, nestled in the mountains of Acevedo, Huila.
Produced by Wilder Lazo, a rising star in Colombia’s new generation of coffee producers, this lot embodies both scientific precision and creative artistry.

Wilder began his career in 2017, assisting his father on the family farm. Blending tradition with research-driven innovation, he quickly became one of Colombia’s most forward-thinking producers. With a background in genetics, he founded his own varietal development program and now cultivates more than a dozen rare varieties.

This particular lot underwent a double fermentation process using Semi-Washed Anaerobic methods.
After careful handpicking and selection, the cherries were fermented with their mucilage inside GrainPro bags for 140 hours, then transferred to plastic tanks for an additional two days of fermentation, followed by 18 days of sun-drying.

During drying, tangerine peels are placed atop the moist parchment, imparting a gentle citrus essence that enhances the floral notes of the Geisha variety. Afterward, the coffee is stabilized for 25 days to refine its flavor and balance.

The cup reveals refreshing aromas reminiscent of mint and Assam tea, complemented by a juicy grapefruit-like finish.
