世界的に評価の高いEthiopia内Yirgacheffe地域から、特別なコーヒーが届きました。
EthiopiaのGargari Gutity農園は、Yirgacheffe地域の中でも特に優れたマイクロロットを生産することで知られています。
今回のロットは、オーストラリアのSasa Sestic氏（2015年世界バリスタチャンピオン）が手がける「Project Origin」の一環として、Carbonic Macerationプロセスで生産された特別な豆で、その中でも“Amber”という繊細さと透明感のあるフレーバーが特徴のカテゴリーに分類されます。
今回のロットでは完熟したチェリーのみを手摘みし、糖度20〜22°Brixのものを厳選。ステンレス製の密閉タンクに二酸化炭素と共に充填し、短時間の嫌気性発酵を行っています。
その後、乾燥ベッドの上で25〜30日間かけてゆっくりと乾燥させることで、クリーミーな質感が実現されています。
これらの製法により、Ethiopiaのコーヒー特有の果実味はより濃厚で奥行きのある味わいに発展し、GrapeやRed Wine、Black Berryを思わせる芳醇なアロマとジューシーで密度の高い質感が生み出されました。

We are thrilled to announce the arrival of a vibrant Geisha coffee from Ethiopia, specifically from the renowned coffee-producing region of Yirgacheffe, known for its high altitudes and significant temperature variations between day and night, which create ideal conditions for coffee cultivation. This batch comes from the Kochere area within Yirgacheffe.
This lot has been processed using Carbonic Maceration, a method derived from wine-making, to further enhance the delicate and floral flavors characteristic of Ethiopian Geisha coffee.
Initially, only cherries with a Brix value of 20-22 degrees, indicating full and ripe redness, are carefully selected. These cherries then undergo anaerobic fermentation in an oxygen-free environment filled with CO
₂.
By meticulously controlling the temperature and humidity, the fermentation is carried out at low temperatures for a short duration. This process develops a cup with a robust sweetness reminiscent of rum and a light fruitiness similar to blood orange.
