近年コーヒー界で注目を浴びているDon Eli農園より、新しいロット『Tomodachi』が届きました。
Don Eli農園はCosta Ricaの名産地、Tarrazu（Los Santos地区）に位置し、標高約1900mの火山性土壌が育むスペシャルティコーヒーで近年高く評価されています。
農園主のCarlos氏は、市場の浮き沈みを経験したことから量より品質を追求するようになり、その信念を息子Jacob氏とともに形にしています。家族一丸となって栽培から精製まで丁寧に取り組むことで、毎年安定して素晴らしい品質のコーヒーを生み出しています。
今回ご紹介するロット『Tomodachi』は、独自のDouble Fermentation Processと言われる、収穫後のチェリーをまずタンクで3日間発酵させ、その後デパルプしてから再び3日間発酵を施しすものとなります。この繊細な二段階発酵が、コーヒーに豊かな甘さと複雑な風味をもたらしています。
味わいは、Almondのような甘くまろやかな質感をベースに、Raisinを思わせる芳醇な甘み、さらにOrangeの爽やかで心地よい酸味がバランスよく広がります。

A new lot, “Tomodachi,” has arrived from Don Eli, a farm gaining increasing attention in the specialty coffee world in recent years.
Located in Tarrazú (Los Santos region), one of Costa Rica’s most renowned coffee-growing areas, Don Eli sits at an elevation of around 1,900 meters, where rich volcanic soil nurtures exceptional coffee.
Carlos, the owner of Don Eli, shifted his focus from quantity to quality after experiencing the volatility of the coffee market. Together with his son Jacob, he has turned that vision into reality. Their family-run operation carefully manages every step — from cultivation to processing — resulting in consistently outstanding lots each year.
This particular lot, “Tomodachi,” is processed using a unique Double Fermentation method. First, the whole cherries undergo a 3-day fermentation in tanks. After depulping, the coffee is fermented once more for another 3 days. This delicate two-stage fermentation process brings out rich sweetness and complex flavors.
The cup features a soft, rounded sweetness reminiscent of almonds, layered with raisin-like richness and a bright, refreshing acidity similar to orange.
