Only the ripest coffee cherries are selected for anaerobic fermentation in closed tanks for three days with Mosto (coffee cherry juice). This fermentation increases the intensity of the flavors and allows the various Berry flavors that are typical of Ethiopia to be more clearly perceived. The wine is then slowly dried in a place out of direct sunlight for 30 days. The slow drying process gives this coffee a clean cup and sweetness.
