ColombiaのValle del Cauca県Caicedonia地区に位置するPotosi農園は、CGLE(Café Granja La Esperanza)グループが所有する代表的な農園のひとつです。CGLEは、数々の国際大会で高い評価を受けるトッププロデューサーであり、高品質かつ革新的なコーヒーづくりで、世界中のバリスタやロースターから信頼を集めています。
農園の運営を担うRigoberto Herrera氏は、発酵管理や環境への深い理解と豊富な経験を活かし、希少品種や先進的なプロセスを取り入れたユニークなロットを数多く手がけています。
今回のロットには、エチオピア由来の希少品種Sidraを使用。選別された完熟チェリーを、CO₂を注入しながらも空気の流れを確保した特殊な発酵タンクで48時間発酵させています。この設計により過発酵を防ぎつつ、クリーンでバランスの取れたフレーバーが引き出されています。その後、48時間の機械乾燥と8日間の天日乾燥という二段階乾燥で丁寧に仕上げられます。
ApricotやRaspberryを思わせる華やかでフルーティーな香りに、Honeyのような重厚な甘みが重なった、豊かで魅力的な一杯です。

Finca Potosí, located in Caicedonia, Valle del Cauca, Colombia, is one of the flagship farms owned by CGLE (Café Granja La Esperanza), a producer renowned worldwide for its exceptional quality and innovative approach to coffee. CGLE has gained the trust of baristas and roasters across the globe through consistent success in international competitions.
The farm is managed by Rigoberto Herrera, whose deep understanding of fermentation and the environment, coupled with years of experience, allows him to create unique lots featuring rare varieties and advanced processing methods.
This particular lot features the rare Ethiopian variety Sidra. The carefully selected ripe cherries undergo a 48-hour fermentation in a specially designed tank that injects CO₂ while allowing air circulation. This setup prevents over-fermentation while enhancing clarity and balance in the cup. After fermentation, the coffee is finished with a two-step drying process—48 hours of mechanical drying followed by 8 days of sun-drying.
The result is a vibrant and captivating cup with floral and fruity aromas reminiscent of apricot and raspberry, layered with the rich sweetness of honey.
