Colombia Huila Gasca Brothers Zarca（コロンビア・ウィラ・ガスカ・ブラザーズ・ザルサ）
ColombiaのHuila県に位置する、Zarza農園から新しいコーヒー豆がリリースされました。
生産者ジョナサン ガスカによるこの農園は、Huila県の中でも、Pink Bourbonや、Pacamaraといった希少な品種のコーヒー豆を栽培する、コロンビアを代表する農園の１つです。
今回登場する品種はPacamara と言われる品種はPacas品種とMaragogipe品種の交配種で、バランスが取れたクリアな味が特徴です。
プロセスは、しっかりと熟したチェリーを洗浄後48時間酸化させます。その後チェリーの状態のままで60時間嫌気性発酵させ、その間に採取された”Most”と呼ばれるコーヒーチェリーから取れたジュースを加え更に発酵を続けます。その後水で洗い流し、10日間天日干しを行います。
Pacamaraの品種由来のBalanceのとれた味わいと、精製処理から生まれるLycheeやStar Fruitを思わせるFlavorをお楽しみください。
A new coffee bean has been released from the Zarza farm, located in the Huila region of Colombia.
This farm, operated by producer Jonathan Gasca, is one of Colombia's premier farms, cultivating rare coffee varieties such as Pink Bourbon and Pacamara.
The featured variety, known as Pacamara, is a hybrid of Pacas and Maragogipe varieties, characterized by its balanced and clear taste.
The process involves washing the fully ripened cherries and allowing them to oxidize for 48 hours. They are then anaerobically fermented for 60 hours while still in cherry form, during which cherry juice, called "Most," is added to continue the fermentation. Afterward, they are washed with water and sun-dried for 10 days.
Enjoy the balanced taste derived from the Pacamara variety and the flavors reminiscent of Lychee and Star Fruit, born from the fermentation process, in every cup.
