農薬や除草剤は使用せずに土壌の栄養バランスを微生物の働きで保持しています。
味わいは然ることながら自然と共生しつつテロワールと豆の個性を調和させた味わいを丁寧な栽培工程で引き出しています。
今回のロットはJansonが所有する農園の中でも比較的高標高、それに伴う寒暖差と特有の微気候により標高の1mの差で大きく環境が異なるロスアルプス区画。長い時間をかけて成熟することで密度の高い味わいを生み出します。
丁寧な乾燥工程を施した今回のロットは、CranberryやGrapeを感じさせる甘さや、品種由来の上質な酸質を持ち合わせた一杯です。
The best Geisha grapes from the Panama Janson Estate, which is well known around the world for its brilliant achievement in the Best of Panama (BoP), have been added to the lineup.

The soil's nutritional balance is maintained by the action of microorganisms without the use of pesticides or herbicides.
The careful cultivation process brings out a flavor that is in harmony with the individuality of the terroir and the beans, while maintaining a symbiotic relationship with nature.
This lot is from the Ross Alps, a relatively high elevation site within Janson's estate, where the environment differs greatly from one meter in elevation due to the accompanying temperature differences and unique microclimate. The long ripening process produces a dense flavor.
This lot, which underwent a careful drying process, has a sweetness reminiscent of cranberry and grape, and a high quality acidity derived from the variety.
