エクアドルの農園から新しいSidra種が届きました。
Soledad農園は、Imbabura州のIntag渓谷に位置し、Colombiaとの国境に近い場所にあります。
この農園は、元登山家で冒険家のJosé Ignacio氏によって設立され、約120ヘクタールの広さを誇ります。標高は約1,515メートルで、コーヒー栽培は約4ヘクタールのみを占め、残りの土地は生物多様性豊かな雲霧林として保護されています。
生産量を抑えることで、生態系全体への影響を最小限に抑えることを目的としています。
彼の環境保護への取り組みと地域社会への貢献により、Finca Soledadは持続可能なコーヒー生産のモデルとして注目されています。
プロセスは、パルプの除去後、コーヒー豆を洗浄し、ミューシレージを取り除くためにオープンタンクで72時間休ませます。その後、暗室で4週間寝かせて熟成させます。
これによりLemon teaの様な綺麗なシトラスな酸味と甘く長い余韻を強く感じて頂けます。

A new Sidra variety has arrived from a farm in Ecuador.
Finca Soledad is located in the Intag Valley of Imbabura Province, near the border with Colombia.
The farm was founded by former mountaineer and adventurer José Ignacio and spans approximately 120 hectares. Of this, only about 4 hectares are dedicated to coffee cultivation, while the remaining land is preserved as a biodiverse cloud forest. By limiting production, the farm minimizes its impact on the surrounding ecosystem.
Finca Soledad has gained recognition as a model for sustainable coffee production due to its commitment to environmental conservation and contributions to the local community.
For processing, after depulping, the coffee beans are washed and left in an open tank for 72 hours to remove the mucilage. They are then aged in a dark room for four weeks, allowing the flavors to fully develop.
This method enhances the coffee’s bright citrus acidity, reminiscent of lemon tea, while delivering a long, lingering sweetness.
