Milan農園より、新しい味わいのコーヒーが到着いたしました。
国際的なコーヒーの評価に魅了され常に先を読むビジネスファーマーであるJulio Madrid氏とコーヒー情熱を注ぐ忠実なマネージャーであるAndres Quiceno氏。
彼らの農園では世界的に注目を得ている品種のみにフォーカスをし精製方法も常に新しいことに取り組み開発し進めています。
その中でも、今回はGeisha種のコーヒーがラインナップに加わります。
今回のプロセスでは窒素を使った発酵工程を使用しております。
チェリーを収穫し、選別をパルピングを行い、そのパーチメントコーヒーの状態でタンクに移され発酵の工程に移ります。
その際に、窒素と酵母、そして水をコーヒーが浸かるくらいまで入れ、その状態で2日間発酵させます。
発酵を終えた後、綺麗な水で洗った上で乾燥工程へと移ります。自然乾燥で約20~30日間乾燥を行います。
品種由来のJasmineの様な華やかさに加え、Muscatを思わせるような綺麗なフレーバーをお楽しみください。

A new flavor of coffee has arrived from Milan Estate.
Julio Madrid, a visionary business farmer captivated by international coffee ratings, and Andres Quiceno, a dedicated manager passionate about coffee, run a farm that focuses solely on globally renowned varieties and continuously develops innovative refining methods.
This time, they are introducing a coffee from the Geisha variety.
The process used for this batch involves nitrogen fermentation. After harvesting, the cherries are pulped and sorted, then moved to tanks for the fermentation stage. During this stage, nitrogen, yeast, and water are added until the coffee is submerged, and the mixture is left to ferment for two days. Once fermentation is complete, the coffee is washed with clean water and moved to the drying stage, where it undergoes natural drying for approximately 20 to 30 days.
Enjoy the exquisite flavors of this variety, featuring Jasmine-like floral notes and a clean, Muscat-like flavor.
This coffee allows you to experience a new aspect of the Milan farm.
*The taste is different from the Nitro Wash process of the Caturra variety from the Milan farm that we used to carry.
