This batch comes from the Kochere area within Yirgacheffe.
This lot has been processed using Carbonic Maceration, a method derived from wine-making, to further enhance the delicate and floral flavors characteristic of Ethiopian Geisha coffee.
Initially, only cherries with a Brix value of 20-22 degrees, indicating full and ripe redness, are carefully selected. These cherries then undergo anaerobic fermentation in an oxygen-free environment filled with CO 2.
By meticulously controlling the temperature and humidity, the fermentation is carried out at low temperatures for a short duration. This process develops a cup with a robust sweetness reminiscent of rum and a light fruitiness similar to blood orange.
