Colombia Risaralda La Rivera

New coffee arrived from La Rivera farm in Colombia.

The variety is Sudan Rume. Originating from South Sudan, it is a breed that is close to the original species of coffee. Recently, it is also used in competitions due to its good taste.

It is a special Process “Honey cold press” that can be said to be their characteristic.
This name was given because it has thorough low temperature control and uses the Honey Process.
After the cherries are picked and sorted, they are transferred to the GrainPro for 2-3 days to ferment at a temperature of 40-45°C. Next, take it out once and lower the temperature to the same as the outside temperature, then ferment it in the tank once. This second fermentation takes up to 4 days and uses 0-8 degree water. Finally, the Honey Process is performed, and the drying is completed when the moisture value reaches 10 to 11%.
