Colombia Huila Gasca Brothers Zarca
A new coffee bean has been released from the Zarza farm, located in the Huila province of Colombia.
This farm, run by producer Jonathan Gasca, is one of Colombia's leading farms in the Huila department, cultivating rare varieties of coffee beans such as Pink Bourbon and Pacamara.
The variety being introduced this time is called Pacamara, a cross between the Pacas and Maragogipe varieties, and is characterized by its balanced, clear flavor.
The process involves washing ripe cherries and oxidizing them for 48 hours.Then, they are anaerobic fermented for 60 hours while still in their cherry state, and the juice from the coffee cherries called "Most" that were harvested during that time is added and the fermentation continues.Then, they are rinsed with water and dried in the sun for 10 days.
Enjoy the well-balanced taste of the Pacamara variety and the flavors reminiscent of lychee and star fruit that come from the refining process.
