A special Geisha coffee has been introduced from El Paraíso farm, renowned for its innovative processing techniques.

The farm owner, Diego Samuel Bermudez, is dedicated to developing unique fermentation and drying methods, consistently astonishing the global coffee community.

This batch has been processed using his newly developed "ZEO Process." The name 'ZEO' is derived from Zeolite, a porous mineral known for its fine, numerous pores.

In this process, harvested cherries are initially flash-frozen at -40°C. They are then quickly dried within 8 hours using a dryer equipped with zeolite and a vacuum pump.

This method not only eliminates the risks of mold and decay but also bypasses the fermentation process typically inevitable in standard processing. This key characteristic of the ZEO process allows for a true representation of each coffee's inherent qualities.

As a result, this coffee boasts a Geisha's signature floral notes reminiscent of roses, coupled with clean fruit notes of lime and nectarine.
