A special Gesha coffee has been added to our lineup from Bolivia, sourced from Las Alasitas Farm managed by Pedro Rodriguez, a leading figure in Bolivia's specialty coffee scene.
In recent years, Bolivia has seen a decline in coffee cultivation due to political changes and a shift towards coca cultivation. Concerned by this trend, Pedro, who originally worked in the import business, took action. He now manages 11 coffee farms and also runs projects sharing his extensive knowledge of coffee cultivation and farm management with other local farmers.
The latest lot from Las Alasitas has been processed using a unique method known as "Washed with most." Unlike traditional washed processes where the coffee cherries' pulp is removed and then the beans are soaked to wash away the mucilage, this process involves removing the cherry pulp and then fermenting the beans in the juice (most) squeezed from the cherry pulp for about 70 hours.
This innovative method enhances the coffee's profile, producing a fruity and refreshing taste reminiscent of honey lemon tea.
