Las Lajas農園のOscar氏とFrancisca Chacón氏によるBlack Diamondプロセスのコーヒーがラインナップに加わりました。
Black Diamond プロセスとは、15~22日の乾燥期間を経て、湿度と温度が管理されたレイズドベッドにて1日間コーヒー豆の表面を乾燥させます。
長期間の乾燥は、通常の工程よりも脱水がゆっくり行われ、急激な温度上昇をしないようコントロールすることにより、コーヒー豆を傷つけず、粘液の糖分を結晶化させることで、より甘く、よりクリアな味わいにすることができます。
品種は風味と旨みの質が高いSL28種でこのプロセスとも相性が良いKenyaを代表する品種です。
Whiskey、Chocolateを思わせる甘さや、明確なCherryを感じさせる華やかな酸味をぜひお楽しみください。
The coffee from the Black Diamond process by Mr. Oscar and Mrs. Francisca Chacón of Las Lajas Farm has been added to the lineup.
The Black Diamond process involves drying the surface of the coffee beans for one day on raised beds with controlled humidity and temperature after a drying period of 15 to 22 days.
Extended drying allows dehydration to occur more slowly than in the usual process and controls rapid temperature increases, preventing damage to the coffee beans. This process also crystallizes the sugars in the mucilage, resulting in a sweeter, clearer taste.
The variety used is SL28, known for its high-quality flavor and richness, making it well-suited for this process and representing Kenya.
Enjoy the sweetness reminiscent of whiskey and chocolate, as well as the vibrant acidity reminiscent of clear cherries.
