We carefully select only the most ripe coffee cherries and ferment them anaerobically in a sealed tank for three days together with the coffee cherry juice called Mosto. This fermentation process enhances the flavor intensity and allows you to more clearly experience the taste of the various berries that are characteristic of Ethiopia. It was then slowly dried out of direct sunlight for 30 days. The slow drying process gives this coffee a clean cup and sweet flavor.
