The processing method for this batch, Carbonic Maceration, was inspired by winemaking techniques. In this process, carbon dioxide is introduced into the fermentation tanks to create an anaerobic environment, and the coffee undergoes anaerobic fermentation for approximately 96 hours.
This method enhances the naturally vibrant flavors of Ethiopian coffee, adding complex notes of cassis and the elegant aroma of black tea.
