Hacienda Copey, a farm that has won the Cup of Excellence in Costa Rica twice, introduces a special Geisha coffee.
Established in 2011 in Copey Canyon, located in the Tarrazú region, this farm sits at a high altitude where extreme temperature variations create a unique microclimate that enhances the coffee's distinctive flavors.
This particular lot comes from the highest section of the farm, known as “top” . Due to the prolonged cool temperatures, the coffee cherries grow slowly, developing high sugar content, which contributes to exceptional acidity and sweetness.
For processing, the fully ripened coffee cherries undergo 120 hours of anaerobic fermentation in sealed bags. They are then dried for 15 days on African beds using the Natural Anaerobic TA process. TA, or Thermal Anaerobic, refers to fermenting the cherries in a warm environment within the sealed bags.
This innovative process combined with the Geisha variety results in a coffee with juicy notes of orange and cherry, complemented by the rich sweetness of brown sugar. Don't miss the opportunity to experience this extraordinary coffee.
