Located in Valle del Cauca, Colombia, Cerro Azul is consistently renowned for producing top-tier lots, setting standards in the region alongside other local farms.

This batch features the esteemed Geisha variety, refined through the distinctive XO Natural process. This method enhances the coffee's deep sweetness and rich aroma, making for an exceptional cup.

The process involves carefully picking only fully matured cherries, which are then fermented under strict temperature control for 48-50 hours. After fermentation, the coffee is stored in silos for several hours before being sun-dried over 28 days.

By rigorously controlling the fermentation process, we preserve clarity while maximizing the volume and richness of the sweetness.

This coffee boasts a creamy sweetness reminiscent of banana and mango, paired with the luxurious aromas of whisky and chocolate.
