Colombia Cauca El Paraiso "Salma "

We have a new coffee from El Paraiso, a famous Colombian farm that has captivated the world with its unique fermentation methods.
At El Paraiso Farm, we use innovative ideas, centered around anaerobic fermentation, to produce original coffee every day.

In order to bring out the fruitiness of this batch, anaerobic fermentation will be carried out with the cherries still attached.
This allows the fruity and complex aroma of the cherry pulp to permeate the beans. After removing the pulp, the beans are fermented again for 48 hours. After that, the beans are "thermal shock washed," which alternates between hot and cold water, to "tighten" the beans and fix the aromatic compounds in them, stopping the fermentation cleanly and sealing in the delicate flavors.

Through these processes, we have managed to bring out the rich character of Gesha and create a gorgeous, sweet cup reminiscent of peach or strawberry tea.

A new coffee has arrived from Colombia's world- renowned El Paraiso farm, celebrated for captivating the globe with its innovative fermentation techniques.

At El Paraiso, the focus is on anaerobic fermentation, where creative and cutting- edge ideas are used to craft uniquely expressive coffees every day.

This particular lot undergoes anaerobic fermentation with the cherry intact , enhancing the fruity and complex flavors that come from the fruit's pulp. After pulping, the beans are fermented again for 48 hours. They are then subjected to a unique washing process called thermal shock washed , which alternates between hot and cold water. This final step helps " lock in" the aroma compounds, halts the fermentation cleanly, and preserves the coffee's delicate flavor profile.

Through these carefully designed stages, the distinctive character of the Gesha variety is further elevated, resulting in a vibrant cup with notes reminiscent of Peach and Strawberry Tea , complemented by a rounded sweetness.
