Colombia Pitalito Aroma Nativo "Papayo "

Aroma Nativo, a company that uses a variety of innovative processes, has released new varieties.

Interestingly, this variety is commonly called "Papayo" in Spanish by farmers in the southern part of Huila because of its papaya-like shape, but genetic analysis has revealed that this variety is a native species of Ethiopia and has multi-layered characteristics that are fruity and floral.

This special batch is made from the ripest coffee cherries, which go through anaerobic fermentation in the cherries, then pulp and ferment again in barrels with indigenous bacteria and special yeasts, then dry in the sun for 16 days and stabilise for 3 months in a temperature-controlled room.

Papayo has a fruity and round taste and undergoes two-stage fermentation, allowing you to experience multiple flavors such as Assam Tea and Passion Fruits.

A new variety has arrived from Aroma Nativo, known for its various innovative processes.

This special lot utilizes the ripest coffee cherries. The cherries undergo anaerobic fermentation in their whole state, followed by pulping and a second fermentation in barrels with indigenous bacteria and special yeasts. Afterward, the coffee is sun-dried for 16 days and then allowed to stabilize for three months in a temperature-controlled room.

The "Papayo" variety, featuring a fruity, floral, and round flavor profile, is enhanced by a two-stage fermentation process, allowing you to experience a spectrum of flavors including black tea and orange.
