From the El Mirador farm, with over 80 years of history, comes a new and innovative batch of beans.
Located in Portal village in the municipality of Palestine, Huila, El Mirador has long been a significant player in the coffee industry. They focus heavily on researching fermentation techniques, using multiple methods tailored to each batch to enhance consistency and quality in their cup profiles.
For this batch, only high-brix cherries were selected to improve cup quality and consistency. These selected cherries undergo an initial 60-hour fermentation in plastic tanks, followed by the addition of molasses and a mother culture of lactic acid bacteria, then further enhanced with a strawberry culture for another 270 hours, totaling 330 hours of fermentation before drying.
This extended fermentation process allows the beans to develop a sweet, fruity flavor reminiscent of strawberry and apricot.
