Black Diamond Process coffee from Oscar and Francisca Chacón of Las Lajas farm has been added to the lineup.
The Black Diamond process involves a 15-22 day drying period followed by one day of surface drying on a humidity and temperature controlled raised bed.
Long-term drying processes dehydrate more slowly than normal processes, and by controlling sudden increases in temperature, the coffee beans are not damaged, and the sugars in the mucus are crystallized, resulting in a sweeter, clearer flavor.
The variety used is SL28, a Kenyan variety with high flavor and taste that is well suited to this process.
Please enjoy the sweetness reminiscent of whiskey and chocolate, and the bright acidity that gives off a clear hint of cherry.
