Ethiopia Alo Sidama JH Washed
Under the visionary leadership of Tamiru Tadesse, Alo.Coffee.Export has rapidly emerged as a leader in the global specialty coffee sector in just one short year since its establishment.
The coffee being released this time is from the "Sky Project," a project where coffee is grown at a high altitude of 2,400m. The aim is to maximize the flavor of the terroir. At this high altitude, cherries ripen slower and are harvested one month later than in other regions. This one-month ripening period creates a sweeter, richer cup profile, further enhancing the flavor.
This time it's a process called JH Washed.
This process was developed in 2020 by Tri-Up in collaboration with Jake Hu of Tasters Coffee, who developed different refining processes to find the perfect balance between terroir, variety and refining process. The process is characterized by its sweetness, aiming for maximum sweetness to support the flavor profile and structure.
1. Select perfect cherries with a Brix value of 24 or higher
2. Ferment the cherries in a tank for 2 days in an environment where the temperature does not exceed 11℃.
3. After peeling, the cherries are dried in elevated beds for four weeks.
You can enjoy the gorgeousness of jasmine as well as a variety of flavors such as grapefruit, white grape, and juniper berry by changing the temperature.
