Las Margaritas farm specializes in growing Geisha as well as rare varieties such as Sudan Rume and Pacamara.
After rigorous cherry picking, the cherries are fermented without oxygen for seven days. After fermentation, the cherries are dried and dehydrated in silos for approximately 24 hours at an average temperature of 37°C. The produce is then transferred to parabolic sun dryers for a further 20 days, before being stored in a temperature-controlled warehouse at 18°C to 19°C.
