Ethiopia Guji Anasora（エチオピア・グジ・アナソラ）
EthiopiaのGujiにあるAnasora Washing Stationからコーヒーが届きました。
品種はエチオピア原種です。
小規模生産農家から運び込まれたチェリーの生産処理を行っています。
品質向上に向けて、様々なルール作りを行っており、 持ち込まれたチェリーは、プロセス前に再度ハンドピックが行われ、未熟豆、過熟豆は取り除き、均一性の高い完熟のチェリーのみを厳選し、Washing Station側がチェリーの受け入れを行います。
今回の精製方法は、Anaerobic Natural Slow Dryです。
バルブのついたビニール袋(布団圧縮袋のような袋)にチェリーを投入し、酸素を脱気した状態にして、Washing Station内の保管庫で嫌気性発酵を行います。昼夜の発酵具合と温度に注意しながら、内部に発生したガスを定期的に抜いて、３日〜７日かけて行っていきます。豆のPH値と色味、香りを確認しながら最終的な判断をします。
GrapeやRed Wineを彷彿させる濃厚な味わいに加え、CacaoやRaisinを連想させる複雑で滑らかな味わいをお楽しみください。
We have received coffee from Anasora Washing Station in Guji, Ethiopia.
The variety is an Ethiopian original.
The station processes cherries brought in by small farmers.
The cherries are hand-picked again before processing, and unripe or over-ripe cherries are removed.
The refining method used this time is Anaerobic Natural Slow Dry.
The cherries are placed in a plastic bag with a valve (like a futon compression bag) to degas the cherries and undergo anaerobic fermentation in the storage room inside the Washing Station. This is done over a period of 3 to 7 days, paying attention to the fermentation condition and temperature during the day and night, and periodically removing the gas generated inside. The final decision is made by checking the PH value, color and aroma of the beans.
Enjoy the rich flavor reminiscent of Grape and Red Wine, as well as the complex and smooth taste reminiscent of Cacao and Raisin.
