Colombia Huila Las Flores "Duo Cherry"
From the Las Flores Farm, which garners attention worldwide for its innovative refining methods, comes a new addition to the lineup of coffee beans.
Las Flores Farm has been a leading coffee farm in Colombia for over 30 years. Jhoan, who inherited the farm from his predecessors, shifted the focus from quantity-oriented cultivation to quality-oriented multi-variety cultivation during his tenure. With its innovative refining methods and high quality, the farm has gained attention in international competitions and events.
For this batch, after undergoing 60 hours of anaerobic fermentation, the coffee cherries are further fermented for an additional 36 hours in water at 30-32 degrees Celsius along with yeast extracted from the same type of coffee cherries. After fermentation, the coffee cherries undergo a drying process followed by immersion in water again to increase moisture content. Fresh, unrefined cherries of the same variety are then added and depulped together.
This process achieves a unique flavor profile with a definite sweetness and vibrant fruity notes while suppressing the fermentation sensation.
