Colombia La Loma農園から革新的なプロセスのコーヒーが届きました。
このプロセスでは、最大限の甘味を表現するためにCaturra種とBourbon種が使用されています。
地元で採れた赤い果物の蜜を、乳酸菌や出芽酵母と一緒に徹底された管理の下で糖蜜や黒砂糖などを加えながら190時間発酵させます。
その後、発酵から生まれた蜜とコーヒーチェリーを更に150時間発酵させます。
Peach,Pineappleを思わせるフルティーな味わいや、Lemon teaを感じさせる余韻と甘さを是非お楽しみください。
An innovative process coffee has arrived from the Colombia La Loma estate.
In this process, Caturra and Bourbon varieties are used for maximum sweetness expression.
Nectar from local red fruits is fermented for 190 hours with the addition of molasses and brown sugar under strict control along with lactic acid bacteria and budding yeast.
The nectar and coffee cherries are then fermented for another 150 hours.
Please enjoy the fruity flavor reminiscent of peach and pineapple, and the lingering sweetness reminiscent of lemon tea.
