Colombia Los Nogales（コロンビア・ロス・ノガレス）
Colombia Los Nogales農園から特殊プロセスのコーヒーが届きました。
Los Nogales農園は毎年各国で開催される品評会、Cup of Excellenceで2005年に初代チャンピオンに輝いたColombiaを代表する農園です。
Huila県Pitalitoに位置するこの農園は、標高1,600-1,700mの高地にあり、昼夜の寒暖の差によりコーヒーチェリーがゆっくり熟すことで、風味豊かで奥行きのある複雑な味わいになります。栽培に適した環境から生まれる品質の高い味わいを堪能することができます。
今回のプロセスは、Dry Washedと言われる丁寧な脱殻工程を行いMosto(モストと呼ばれるコーヒーチェリージュース)と、農園独自のYeastを使用し、200時間発酵させます。その後、12時間乾燥させる農園独自のプロセスです。
プロセス由来の、CheesecakeやPeach Yogurtのような味わいと、温度変化によって、Pineappleを思わせる濃厚な甘みも堪能できる一杯です。
We have received a special process coffee from Los Nogales Estate in Colombia.
Los Nogales is one of Colombia's leading farms, having won the Cup of Excellence in 2005, the first time it has been crowned champion in the Cup of Excellence, a competition held annually in various countries.
Located in Pitalito, Huila Province, at an altitude of 1,600 to 1,700 meters above sea level, the difference in temperature between day and night allows the coffee cherries to ripen slowly, resulting in a rich, deep, and complex flavor. Visitors can enjoy the high quality flavor that comes from an environment that is ideal for cultivation.
In this process, coffee cherries are carefully de-hulled (Dry Washed) and fermented for 200 hours using Mosto (coffee cherry juice) and the farm's own Yeast. After that, the coffee is dried for 12 hours, a process unique to the farm.
The result is a cup that tastes like Cheesecake or Peach Yogurt and has a rich sweetness reminiscent of Pineapple, which can be enjoyed by changing the temperature.
