This process is called TIM. Terroir Intensified Maceration is an abbreviation of Terroir Intensified Maceration. Appropriate microorganisms are collected and isolated from coffee cherries and their surrounding environment, and fermented with coffee cherries to amplify the characteristics derived from the terroir, creating a sweet flavor that cannot be felt with the normal washed process. The variety used this time is the 74158 variety cultivated by Mr. Tamiru Tadesse, one of Ethiopia's leading farm owners.
