Colombia Juan Martin "Sidra"（コロンビア・ファン・マルティン・シドラ）
業界で注目される品種である “Sidra種”がラインナップに加わりました。
Ecuadorで開発されたRed Bourbon種とTypica種のHybrid品種です。
Bourbonの甘さ、Typicaの華やかなAlomaを兼ね備えることで、上質な酸と滑らかな口当たりが特徴的です。
優れた風味特性による高いカップクオリティでバリスタの競技会でも使用され、輝かしい功績を残した事で注目されています。
今回のロットはColombia Cauca県に位置するJuan Martin農園で栽培されたSidraです。
Colombia国内の小規模生産者の品質向上に努め、スペシャルティコーヒーの市場を開拓するBanexport社と協力し品種開発と栽培に力を入れるとともに農園の持続可能性を高めるために環境保全は勿論のこと高品質なコーヒー生産の根源として労働者に対しての様々な配慮も行っています。
品種ごとで細かく収穫タイミングを定めることで,
理想的な熟度での収穫を行い欠点を抑え、生産ロスを減少させます。
高い精度により最大限の収益に繋げ,さらに高品質なコーヒー生産のサイクルを作り上げています。
29haの中の1haで試験的に栽培されたSidraは適した糖度で収穫され、72時間の発酵工程のち乾燥されています。
MangoやPineapple、様々なTropical Fruitsを連想させる明瞭感のある酸質と、重厚感のある味わいをお楽しみいただけます。
The "Sidra" varieties have been added to the lineup.
It is a hybrid of the Red Bourbon and Typica varieties developed in Ecuador.
It combines the sweetness of Bourbon and the floral Aloma of Typica, and is characterized by its fine acidity and smooth mouthfeel.
It has been used in barista competitions for its high cup quality due to its excellent flavor characteristics, and has attracted attention for its brilliant achievements.
This lot of Sidra is grown at the Juan Martin Estate in the Cauca Province of Colombia.
The company has been working to improve the quality of small-scale producers in Colombia and has been cooperating with Banexport, a company that is pioneering the specialty coffee market, to develop and cultivate new coffee varieties. The company also takes care of its workers in a variety of ways to enhance the plantation's sustainability.
The harvesting timing is carefully controlled for each coffee variety.
This allows us to harvest at the ideal ripeness to minimize defects and reduce production losses.
This high level of precision leads to maximum profitability and a cycle of high quality coffee production.
Sidra, grown on a trial basis on one hectare of the 29 hectares, is harvested at the right sugar content and dried after a 72-hour fermentation process.
