Colombia Monteblanco Passion Fruit Washed（コロンビア・モンテブランコ・パッション・フルーツ・ウォッシュド）
ColombiaのMonteblanco農園から興味深いユニークなプロセスのコーヒーが届きました。
品種はPurple Caturra、Monteblanco農園で発見されたCaturraの突然変異種で名前の通り紫色に熟し、通常のCaturraよりも糖度が高い事が特徴の品種です。
今回のプロセスは、Passion Fruit Washedと名付けられ、パッションフルーツ、パイナップル、オレンジ、マンゴー、サトウキビ由来の黒糖などを190時間発酵させます。
その後、これらのフルーツから生まれた酵母とコーヒーチェリーを密閉タンクで150時間嫌気性発酵させ、チェリーを水で洗浄し2〜3日天日で干し、日陰に移動させた後さらに15〜18日乾燥させます。
プロセス由来のPassion fruitsやMangoを思わせるフレーバーや、OrangeやGrape fruitを感じることができるを感じる事ができるコーヒーです。温度によって明確に変わる味わいをお楽しみください。
From Monteblanco Estate in Colombia comes a coffee with an interesting and unique process.
The variety is Purple Caturra, a mutant of Caturra discovered at Monteblanco Estate, and as the name suggests, it ripens purple and is characterized by higher sugar content than regular Caturra.
This time, the process is called Passion Fruit Washed,
Passion Fruit Washed" is the name given to this process. Passion fruit, pineapple, oranges, mangoes, and brown sugar derived from sugar cane are fermented for 190 hours.
The cherries are then washed with water, dried in the sun for 2-3 days, moved to the shade, and dried for another 15-18 days.
This coffee has flavors reminiscent of Passion fruits and Mango from the process, as well as Orange and Grape fruits. Enjoy the distinctly different flavors depending on the temperature.
