Ethiopia Tamiru Sky Project（エチオピア・タミル・スカイ・プロジェクト）
Ethiopiaから革新的なプロジェクトのコーヒーが届きました。
Sky Projectは地球温暖化に対する持続可能な解決策を見い出すと同時に、より品質の高いコーヒーを調達することを目指しており、従来よりも標高の高い場所での栽培を早期から実践することで、将来に向けて品質の良いコーヒーを多く生産する準備をしています。
今回のプロセスは、TIMと言われるTerroir Intensified Macerationの略で、コーヒーチェリーとその周辺環境から適切な微生物を集め分離させ、コーヒーチェリーと共に発酵させる事でテロワール由来の特徴が増幅され、通常のWashed プロセスでは感じれない甘みのあるフレーバーを生み出しています。
今回使用された品種は、Ethiopiaを代表する農園主のTamiru Tadesse氏が栽培した、74158の品種を使用しております。
プロセス由来のCleanな口当たりに加え、La France やWhite Grapeを思わせる濃厚な甘みをお楽しみください。
An innovative project coffee has arrived from Ethiopia.
The Sky Project aims to find sustainable solutions to global warming while at the same time sourcing higher quality coffee, and is preparing to produce more quality coffee for the future by implementing early cultivation at higher elevations than previously possible.
This process is called TIM, which stands for Terroir Intensified Maceration, and by collecting and isolating appropriate microorganisms from the coffee cherries and their surrounding environment and fermenting them together with the coffee cherries, the terroir-derived characteristics are amplified, producing a sweet flavor that cannot be felt with the usual Washed process. The varieties used in this coffee are 74158 varieties grown by Mr. Tamiru Tadesse, the owner of one of Ethiopia's leading plantations.
In addition to the Clean mouthfeel derived from the process, the wine has a rich sweetness reminiscent of La France or White Grape.
